Honey Drop Cookies - from "Rainy Day Fun"
Honey Drop
Cookies
Makes 3 Dozen
Bake at 350
For 10-12 minutes
Tools: Adult Baking Buddy, Hand Mixer, Spatula, Measuring cups & spoons, Oven mitts, Cookie sheets, and cooking rack.
Parchment paper is optional
First step: Where is your adult baking buddy? Are they ready to get started like you are? If they aren't around, talk to them about a good day and time to make the cookies.

If they are ready...then let's do this!

Ingredient list:
1 Cup of Softened Unsalted Butter
1 Cup of Brown Sugar
2 Large Eggs
1/3 Cup of Honey & Extra for drizzling
1 teaspoon of Vanilla
2 teaspoons of Baking Soda
3 1/2 Cups of Flour (All purpose)
Pinch of Salt
OPTIONAL INGREDIENT - Sea Salt

Step 1 - Put Sugar & soft butter in a bowl. Use a hand mixer to cream the 2 ingredients together. (Tip-start on low speed)
Step 2 - Add 1 egg at a time into the bowl and blend with mixer. Add the 2nd egg and do the same till mixed together.
Step 3 - Now add the Honey & the Vanilla into the bowl. Just a quick mix will do.
Step 4 - In a new bowl mix together the FLOUR, BAKING SODA, and the PINCH OF SALT
Step 5 - Slowly add the flour mixture into your bowl (of wet ingredients) a bit at a time. Use spatula if you need to scrape sides of bowl. (Tip start on low...otherwise you will be covered in flour!)

Now you will see why we are using a hand mixer instead of a spoon. The cookie dough becomes heavy and is very hard to mix by hand.

Step 6 - Throw plastic wrap or a towel over the bowl and put it in the refrigerator for 30 - 60 minutes. (You don't have to do this part. But if you can be patient...you will be rewarded with fluffy cookies vs flat cookies.)

Step 7 - Time to make your cookies!! Did your adult baking buddy pre-heat the oven to 350 degrees? Are the cookie sheets out and ready? I use non stick cookie sheets and still line them with parchment paper. Easy clean-up and no hard cookie bottoms.

You have 2 choices on how to make your cookies...you can even make them both ways...I always do. The photo below shows both kinds...can you tell which are which?

A)Roll the dough into a ball with your hands and place on the cookie sheet. Flatten the top down slightly.
B) Or drop the cookies - by taking a spoon full of dough and just push it off the spoon with your finger or another spoon.

Safely help or watch your baking buddy place the cookies in the oven. Set the time for 10 minutes and peak and see if they have turned golden yet. You can let them cook another minute or two.

DING.....time to take them out and let them cool.
​
But if you read the book... you know that Grace had an awesome idea. She loves honey so much that she wanted to drizzle extra honey all over the tops of the cookies. Mrs. Bee thought that was a great idea!
So grab a spoon or a honey stick and wiggle it back and forth over the warm cookies. Here is where the optional Salt comes into play. Sprinkle just a few salt crystals onto each cookie. Literally 3 little pieces is enough. Or none at all.
These are your cookies, so if you love nuts feel free to add those too.

Harriet's Famous Cherry Dump Cake

In book 6 "Crisis in the Chrysalis"

Bake at 375 for 50-55 minutes
​
Tools: Adult Baking Buddy, Oven Mitts, Cooking Spray, 9x13 baking pan
​
Ingredient list: 1 stick of unsalted butter – sliced; a Box of Yellow Cake Mix; Frozen Cherries; honey; optional ingredients: nuts, granola, pie filling
​
Step 1 – Spray your pan and spread the frozen cherries on bottom of pan (or any pie filling, apple is delicious)
Step 2 – Dump 2/3 of the cake mix over the cherries (or substitute a granola for a crispier top)
Step 3 – Spread the pats of butter over the top of the cake mix
Step 4 – Drizzle honey over the top
Step 5 – Sprinkle optional nuts over the top
Step 6 – Bake for 50 – 55 minutes, until the top is brown, and the cherries are bubbling up.
